This baked chickpea appetizer is crispy on the outside, soft on the inside, and a real protein bomb! Made with simple and healthy ingredients such as chickpeas, sweet potatoes, onions, and sweet red peppers, this chickpea appetizer is easy to prepare, filling, and incredibly delicious. Perfect as a snack, light lunch, or even as a healthy alternative to French fries! If you're looking for a budget-friendly, high-protein, oil-free, plant-based recipe, this one is worth trying!
📌 Ingredients:
• 250g Canned chickpeas
• 1 Sweet potato (appromixmately 200g)
• 1 Onion
• Ghee (Substitute vegetable oil if you are vegan)
• 1 Red sweet pepper
• Little lemon zest
• 2 tbsp Chickpea flour
• Salt to taste
• Freshly ground pepper
• ½ tsp Dried garlic
• ½ tsp Smoked ground paprika
• 50g Crushed corn flakes
📌 Sauce:
• Fresh parsley, mint and basil
• 100g Natural yogurt(Replace with plant-based yogurt if you are vegan)
• 10g Almond flakes
• Salt to taste
