►INGREDIENTS

►For the Peri Peri Chicken and Peri Peri Marinade

►Chicken Prep

1.5 kg chicken wings
2 tsp salt
1 tbsp cayenne pepper
2 tsp black pepper

►Peri Peri Marinade

1 small onion
7 garlic cloves
1 large lemon
7 - 8 birds eye chilies
2 mexican serrano chilies
1 tbsp tomato paste
1.5 tbsp paprika
1 tbsp oregano
2 tsp rosemary
2 tsp sugar
2 tsp salt
1/4 cup vinegar
7 tbsp oil
5 tbsp water


►Red Cabbage Coleslaw

2 egg yolks
1 tsp mustard
1 tbsp vinegar
250ml sunflower/olive oil
2 tsp chipotle
1 tsp tamarind
1 tsp black pepper
Salt to taste
2 tsp cayenne pepper
2 tsp sugar
500g red cabbage
2 carrots (once thinly sliced, press it to remove the water)
Half a brown onion
