Method

Heat ½ tsp oil in a pan.

Add chana dal, urad dal, fenugreek seeds, coriander seeds, mustard seeds, and cumin seeds.

Roast on medium flame until golden brown and aromatic.

Add 4–5 garlic cloves and roast till lightly golden.

Transfer to a plate and let cool.

In the same pan, dry roast the red chilies until they puff and darken slightly.

Remove the stems and keep them aside with the roasted spice mix.

Peel and chop the raw mangoes into medium pieces.

First, grind the red chilies and roasted spices with salt and turmeric to a coarse mix.

Add half of the chopped mango pieces and grind using pulse mode.

Add the remaining mango pieces and grind again to a coarse chutney (not too smooth). A little texture adds to the taste.

Heat 2 tbsp oil in a small pan.

Add chana dal, urad dal, mustard seeds, and cumin seeds.

Once they begin to splutter, add crushed garlic, and roast till golden.

Turn off the heat and add broken red chilies, asafoetida, and curry leaves.

Pour the hot tempering over the chutney and mix well.
