Breadfruit pudding
Yield: 2 (9 inch pans)

2 lb Breadfruit, diced
1. 5 litter coconut milk
1 pint evaporated milk
1 cup rum soaked raisins
1 lb brown sugar
1 cup cornmeal
8 oz bread crumbs
1 tbsp nutmeg
2 tsp cinnamon powder
1 tsp salt
1tbsp vanilla
1/2 stick butter
1 cup grated coconut

Procedure.
1. Pour 1 litre coconut milk in the jar of a blender.
2. Add diced breadfruit and rum soaked raisins. Puree until smooth.
3. Pour pureed breadfruit in a large bowl. Add the remaining ingredients mix to combine using a wooden spoon.

4. Pour batter into two 9 inch greased baking pans. Bake at 375F for 1 hour and 30 minutes.

Chef's notes
For custard on top
Reserve 1 coconut milk, 1tbs butter and 1/2 cup sugar. Mix to combine.
Pour over puddings 20 before removing them from oven.
